I did a PhD in ancient Greek philosophy, asking why Plato has such a massive influence on how we experience life. But strangely, although I learned a lot and am glad that I did it, the doctorate did not really answer my question.

One of my main interests as an economist has been to understand the sources of this trend and its broad effects. The key driving force is new technologies. We are better off than our Victorian ancestors, not because we have more of what they had but because we have new things, such as airplanes and indoor plumbing. I’ve been in love with the Middle Ages ever since my mother handed me a copy of The Conquering Family, by Thomas B. Costain, when I was in the 7th grade. Eventually, I went on to earn a degree in history from the University of Arizona. In addition to the many colorful characters who impacted the medieval world, I became entranced with the art of the time period, particularly manuscript paintings. Their beauty, reverence, whimsy, even their occasional naughtiness, are, to me, simply enchanting! It was impossible not to share my love of this artform in at least one of my novels. One cannot dismiss the importance of religion during the Middle Ages. I write historical fiction set in medieval Italy, in that lesser-known territory somewhere between ancient Rome and the Renaissance. I’m fascinated by the period before the Medici, before Michelangelo, sometimes even before Dante. The seeds of the Renaissance are hidden in that turbulent time, and I love to hunt for them. I also like to write about marginalized people—the obscure, unfamous, forgotten folk plucked from the footnotes. I’m happy to introduce some of the excellent history books that help me do that. My interest in medieval food and cookery combines two of my great passions in life, but I first started to become seriously interested in the combination when researching religious dietary ideas and practices. I am fascinated by the symbolic role played by food and drink in religious life, and by fasting and self-denial as part of a religious tradition, but also in the ways in which medieval communities feasted and how tastes in food and drink developed through trade and cultural exchange. I teach an undergraduate course on Feast, Fast, and Famine in the Middle Ages because questions about production, consumption, and sustainability are crucially important for us all.
Constance Hieatt, who died in 2011 before this book came out, was probably the most important historian of medieval English food and cookery. She discovered many recipes in manuscripts that would otherwise have gone unnoticed and edited and commented on a huge body of evidence for English medieval cookery. This book is the culmination of a career’s worth of identifying recipes and reconstructing them for modern readers. Its value lies in providing answers to practical questions about medieval cookery with examples and references from the sources. Professor Hieatt was particularly interested in making medieval recipes available for modern cooks, and this is probably the best guide.
