First published in 1820, this book reminds us that nefarious practices have always been used by food producers, and that these practices are generally intended to boost profits with little concern for human health. ‘There is death in the pot!’ the author tells us in his preface, and he goes on to catalogue how products such as beer and bread, cheese and cognac, olive oil and vinegar were all being adulterated or counterfeited. More unusually, he goes on to explain case by case how the layperson can unmask the fraudsters with a little knowledge of home chemistry. Unfortunately for his readers past and present, technological developments since 1820 have allowed unscrupulous purveyors of human sustenance to develop countless new ways of disguising poor-quality or badly-deteriorated food.

This book is only available in French, but I include it because it provides such an impressive overview of a period when French cooking began to establish itself as Europe’s pre-eminent cuisine. I referred to it frequently during my own research into French gastronomy. In a few short pages we learn about the emergence of the first celebrity chefs and food critics, the evolution of how food was served in polite society in France and other parts of Europe, and the way in which new ingredients such as maize and potatoes became staples of the peasant diet. There is also a section on Napoleon’s own culinary preferences, which reveals more about the tastes of the common soldier than the general.
I’ve always been fascinated by the failed revolutions of the 19th century and by the romantic socialists, democrats, and nationalists who made these revolutions. I think I have a better understanding of their world and the forces that brought them down than I have of the world I live in. But I do find in their writings remarkable echoes of my own fears and hopes about the future of democracy today.
T.J. Clark treats 1848 as a time when “art and politics could not escape each other,” and he offers a brilliant discussion of the efforts of artists to confront that situation. There are wonderful chapters on Delacroix’s anguished retreat into a private world, Millet’s portrait of the peasantry as a class in dissolution, and Baudelaire as a poet of post-revolutionary despair.
But for me, the most arresting portions of the book focus on Daumier, who was unique in his ability to depict the life of the Paris streets and create the great image of the Bonapartist con-man in the figure of Ratapoil. What I find most telling in these portraits, and the book as a whole, is T.J. Clark’s ability to “put back the doubt into revolution”—to recapture the confusion, the uncertainty, and the sense that everything was at risk.
When this book and its companion volume, Image of the People, appeared in 1973, they were taken as a challenge to the way art was usually written about. "This book," said the Times, "is a product of that school of art history whose history is as well read as its art, and whilst it covers only a small area of time and place, Clark's approach and style are such that it throws up enough ideas and pleasures to illuminate far beyond its rather special circumstances. It is suffused with wit and pathetic irony."

Robb provides some episodic portraits of some of those stages, and the chapter on the eighteenth-century architect Charles-Axel Guillaumot is one of the most arresting discussions I’ve ever seen of how the actions of those living in one epoch can reverberate for generations to come. Guillaumot literally saved Paris from collapsing in on its medieval past by bracing up the swiss-cheese-like network of tunnels that had been left behind by its medieval quarry workers.

I have always been fascinated by France and things French. In graduate school, no women’s history was on our required reading lists. As a young woman, though, entering a professional field in which women were few on the ground, much less studied, I became an avid reader of biographies of achieving women – partly to learn how they were able to surmount (or not) the obstacles that confronted them in a male-dominated world. The five stellar biographies of French women I present here are products of the newer work in retrieving women’s histories. They are deeply researched and engagingly written. They confirm the saying that “truth is stranger than fiction.”
This splendid biography traces the life and times of the Marquise Du Châtelet, born in Paris in December 1706, who became one of the most erudite women of her époque. For fifteen years she was the companion to Voltaire, the best-known of the French philosophes. She mastered calculus and translated Newton’s Principia, in addition to carrying on an active social life and raising several children. She died at the age of 42, following the birth of a daughter conceived with another lover. The author explains her subject’s life course as “from a life of frivolity to a life of the mind.” It’s a great read.

Colette, born Sidonie-Gabrielle Colette in 1873, was a ferocious talent, a novelist, memoirist, journalist, and colossal French cultural figure until her death in 1954. Earthly Paradise is an autobiography in essays, and hers is an extraordinary story. Born in small-town Burgundy, she was a showgirl at the Moulin Rouge, a traveling performer, was married twice, lived as a lesbian for a decade, had a facelift in the 1920s and at the height of her literary fame, opened a beauty salon in Paris. She was to the core a sensualist and though she claimed to dislike feminism, she was a tower of female strength.
