Why read it?

2 authors picked On Food and Cooking as one of their favorite books. Why do they recommend it?

Twenty years old and still the Bible for me. It’s all here. I used to wonder why we did things in the kitchen in a certain way, but now I know. The author doesn’t flinch from the hard science and, besides explaining so many things, that enables him to explode a number of common kitchen myths (searing meat doesn’t seal in the juices) and provide lots of practical advice for the home kitchen.

Other supposedly food and science books have come and gone, but McGee remains my go-to source.

Truly a remarkable book, this seminal work has been – and continues to be - profoundly influential in shaping our understanding of food. The book’s subtitle – An Encyclopedia of Kitchen Science, History and Culture – expresses its huge breadth Writing with great clarity and concision, McGee shares the history of foods – such as cheese, chocolate, grains, sugar – and explains the science of how humans use, cook and preserve them. If you’re at all interested in understanding food better, then this is the book for you.
